Sirman's superbly-constructed 4-horsepower hard cheese grater (model gf-hp4) does only one thing: it grates hard cheese (no mozzarella, no brie), turning bricks of hard cheese into a delightful powder. If this is exactly what you need done then this is a great choice: a powerful kitchen workhorse that is suitable for large operations that require industrial quantities of hard cheese to be processed. This stainless steel grater will grate up to eight pounds a minute and drum is studded with 1/16" teeth for "very fine" grated product. The operational interlock is a safety feature which prevents the grater from starting if the handle is insufficiently depressed; in a similar fashion the engine cuts out when you lift the handle. The hopper measures 11.82" x 6.31" and is made of anodized aluminum. The heavy duty 3000-watt fan-cooled motor is gear-driven and features a thermal overload relay.
