To make this dry cured sausage, you must maintain certain temperatures and humidity along with a pH level of below 5.0 for safe consumption. Use Insta Cure™ No. 1 (nitrite) (instead of Insta Cure #2 (nitrate)) to create homemade pepperoni, stuff sausage into a hog or protein lined casing (Insta Cure No. 1 and casings sold separately). Dry curing is the next level of sausage making. TSM highly recommends reading and understanding the book "The Art of Making Fermented Sausages" for anyone interested in homemade pepperoni before attempting to making this sausage. Contains soy.
