Blood sausage is an acquired taste, but once you develop that taste there’s no going back. This seasoning mix from T.S.M. (model 91020) is designed to provide a flavor like that of New Orleans blood sausage Boudin (itself a variant of Polish blood sausage or Kiszka). This seasoning will work in creating both bloody and non-bloody types of Boudin. In this highly seasoned sausage, feel free to substitute liver or heart for the traditional fatty pork used in some varieties of Boudin sausages. (Oh, and also feel free to add rice to the recipe in either bloody or milky sausages.)
