These natural T.S.M. hog casings (model 21200) will make about 80 pounds of delicious, savory sausage — you provide the meat and spices! These 100% edible casings make sausages of diameter 1.25” to 1.375” (32-35 mm) and are ideal for bratwurst, Italian Sausage and many other types of common sausages. One pound of ground meat will require about 2 feet of sausage casing. These made-in-the-U.S.A. sausage casings are packed in a purified salt mixture; make sure to soak and flush the casings before use. These natural casings do require refrigeration but after the casings package is opened they are generally good stored in salt brine for a shelf life of approximately a year. Simply remove, soak and rinse just the casing length you need; leave the rest of the unused product in the salt brine. And yes, if you’re smoking your sausage please Note that these casings are Smoke-Permeable. Notes: We do not recommend freezing these casings; this can cause them to become dry and brittle after freezing & more prone to breaking and splitting.
