These hog casings from T.S.M. (model 21100) are 100% edible, all natural and have a diameter measure of 1.125”-1.25” when stuffed. These casings are great when used for hot dogs, breakfast or Italian-style sausage; about two and half feet of casings will result in about one pound of sausage. Made-in-the-U.S.A., these casings ship sealed in a package with a purified salt solution, and if you keep the box sealed these casings have a long, indeterminate shelf life. Once you open the container, however, refrigeration is required; the casings generally last refrigerated about a year (providing you keep them in the salt brine during storage; a sealable zipper bag is included). The casings here make approximately 75 pounds of stuffed sausage links. If you plan to smoke your sausages rest assured these casings are perfectly “smoke permeable”. Note: These casings and others like them cannot ship anywhere outside the U.S.A.; Note also that casings should be soaked in water and flushed before use and they should not be frozen.
