This curing agent, (Insta Cure™ No. 2, model 11400) is specifically formulated to facilitate the proper preparation of the dry-cured meats that everyone loves: namely pepperoni, genoa salami, hard salami, dried farmers sausage, capicola, proscuitti hams, and more. These cured products don’t need smoking, cooking, or refrigeration. The timed release process facilitated by this cure means sodium nitrate will break down and turn into sodium nitrite and then into nitric oxide, curing your meats over extended time periods (in some cases, for up to six months).
