Linguica Sausage Recipe

This recipe makes a delicious traditional Portuguese linguica for you and your family to love! Serve the linguica sausages hot with your favorite accompaniments such as crusty bread, rice, or grilled vegetables.

Linguica Sausage Ingredients:

  • 5-lbs pork butt, coarsely ground
  • 3-tbsp paprika
  • 2-tbsp minced garlic
  • 2-tbsp salt
  • 2-tbsp liquid smoke
  • 1/2-cup red wine
  • 1/2-tbsp sugar
  • 2-tsp freshly ground white pepper
  • 2-tsp dried oregano
  • 1-tsp freshly ground black pepper
  • 2-tsp cayenne pepper

Linguica Sausage Directions:

  • In a large mixing bowl, combine the coarsely ground pork butt, paprika, minced garlic, salt, liquid smoke, red wine, sugar, white pepper, dried oregano, black pepper, and cayenne pepper. Mix well until all the ingredients are evenly incorporated.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight. This allows the flavors to meld together and develop.
  • Prepare your sausage casings according to the package instructions. Rinse them thoroughly and soak them in water.
  • Attach a sausage stuffing attachment to a sausage stuffer or a sausage-making machine.
  • Take the sausage mixture out of the refrigerator and begin stuffing the mixture into the soaked sausage casings, following the instructions of your sausage stuffer. Make sure to leave enough room for the sausages to expand during cooking.
  • Once all the sausages are stuffed, twist and tie off the ends of the casings to create individual sausages. Prick the sausages with a needle to remove any air bubbles.
  • Preheat your grill or a large skillet over medium heat. If using a skillet, add a small amount of oil to prevent sticking.
  • Cook the linguica sausages on the grill or skillet, turning occasionally, until they are browned and cooked through. This usually takes about 15-20 minutes, depending on the thickness of the sausages.
  • Once cooked, remove the linguica sausages from the heat and let them rest for a few minutes.
