It Will Do The Trick, But It'S Flawed...
First off, I did charcuterie and sausage making professionally the last 4 years and now just as a hobby and I continue to teach classes. I bought this primarily for teaching. I used a 30# F. Dick stuffer during my time at the restaurant but I don't have that kind of coin to purchase my own hence, Skyfood. Designers of this machine, I hope you read this. Overall it does just what it is supposed to do. Here are the flaws: 1. The gasket that comes with it sucks. If you flip it over you get a good seal. Otherwise, meat comes up out of the sides of the press plate. A proper o-ring would fix that 2. The canister is mounted about 1.5" too high. It would make stuffing much easier if the stuffer tube were closer to the work surface. 3. This is the big one!!! The crank is on side of the machine instead of the back. I don't know which genius thinks this is a good idea but there must be a few because most stuffers have the crank on the side. I could rant about why this sucks for days!!! Put the crank on the back please. It will make stuffing much easier. Again, this is Chinese design versus German. You get what you pay for. $400 vs. $1800. Happy sausage making! James Naquin
