Especially designed for service in demanding environments, this heavy-duty thermostatic gas griddle from Black Diamond (model Bdctg-36T) is able to quickly reach and sustain precise temperatures during long hours of operation. Each of this unit's four "U-shaped" stainless steel burners produces 30,000 B.T.U.s/hour (that's 120,000 B.T.U.s in all that's math!. The burner heat is distributed evenly over the griddle surface, with the end result of an even and uniform cooking surface and exceptional culinary results. The thermostatic controls are finely calibrated to give you precise control over your griddle, and each burner has its own designated gas valve separate pilot light (the griddle uses a "standing pilot" type of ignition system. The griddle plate itself is polished steel, one-inch thick, easily able to handle high-temperature production for long stretches of time while the griddle's 22" of depth gives you plenty of room to cook (actual cooking surface is 35.75"W x 22"D.
